DOUBLE SPACE IN GOOGLE DOCS
Basically, double space in Google Docs is when there's a full blank line between each row of the text, and there are 2 ways to double space on the Google Docs -via the toolbar, and via the menu bar.

OPTION #1
With the 1st option via the toolbar highlight the part of text that you want to modify, or select the entire document if you need to, then we up to the toolbar, to the icon with an arrow and three lines. Press it and select "Double" - here you have it as simple as that.

OPTION #2
The 2nd option is applied via the menu bar. Highlight the part of the text or the entire text, go to the "Format" button on the top menu, press it and head down to the 4th item, "Line and paragraph spacing". Then drag the cursor to "Double" and here you go.
