How to make Strawberry Shrub

A Shrub is a drinking vinegar and strawberry shrub is one of the best fruits for shrubs. Strawberries become ripe earliest in the summer and my favorite strawberries, hoods, arrive first. They are delicious and make delicious shrub. If you are making shrub, you will want to use the most flavorful berries you can find in your area. The only other thing you will need is sugar, and vinegar. I like pinot noir vinegar, but champagne vinegar, apple cider vinegar, or balsamic vinegar would do as well. Different vinegars have different amounts of intensity, so be careful not to use too much. Like most of my favorite recipes you can sort of wing it. I used 700g strawberries, 400g sugar, and 250g vinegar.

I like to use shrubs to create sodas, which can be drunk as is, or used in a cocktail. I find strawberry goes really well with gin, but vodka would be good, or aquavit, or rum, No Rules!

Show Them A Clean Wheel
1.5 oz Aria gin
.75 oz Strawberry shrub
.5 oz Campari
dash of orange bitters is optional.
stir and serve in a coupe with a grapefruit or orange twist.
