Get the last value in a range in Google Sheets

Displaying the last value in a range in Google Sheets can be a really handy tool. Imagine that you have an input log that appends values to the bottom of the sheet and you want to make a calculation based on the last value in the range only.
Or imagine if you want to display the last submitter of the log in a dashboard.
Super handy.
