Ingredients for preparing curd Easter without baking:
Cottage cheese - 0.5 kg
Raisins - one glass per 250 ml
Butter - 100 grams
Sour cream - 150 ml
Sugar - 150 ml
How to cook curd Easter without baking:
1. Wipe the cottage cheese through a sieve. I do not wipe the curd, but whip it with a blender. When whisking with a blender, the curd becomes soft, like rubbed through a sieve.
2. In a separate cup stir sugar and sour cream. I take high fat sour cream. All is well stirred. Stir the sugar and sour cream until the sugar is completely dissolved.
3. Add the mixture of sugar and sour cream to the curd. All mix well.
4. Add butter to the curd. Beat everything with a blender or mixer into a homogeneous mass.
5. Add the raisins. I previously washed it and soaked it in hot water for 10 minutes. Thoroughly interfere, trying to intervene the raisins in the curd.
6. In the mold (pasochnitsa) for paska we put wet gauze folded in 4 layers. We spread the curd base for the recipe for the classic Easter curd in the pasochnitsa. If there is no form, cover with a gauze, folded in two layers, a colander, and place it in a deep bowl (whey will drain into it). We spread the cottage cheese in a colander.
7. Level and close the curd with the edges of the gauze. We press Easter down and send the form with pascha to the refrigerator to stand for 12-16 hours. The pasochnitsa must be put on a plate so that serum can drain into it.
8. Carefully release the prepared Easter from the pasochnitsa, expand the cheesecloth and put on a dish. Decorate Easter, if desired, with candied fruit, raisins or marmalade.
