FRENCH QUICHE: savoury French tart with custard filling, 4 recipes in one: Quiche Lorraine, quiche with salmon and spinach, quiche with chicken and mushrooms, quiche with pear and cheese. INGREDIENTS for 9'' tart pan (1 1/2'' high):
PASTRY DOUGH FOR CRUST 0:34
225 g all-purpose flour
120 g butter
10 g sugar
4 g salt
60 ml very cold water
QUICHE CUSTARD 4:00
4-6 eggs (usually it's 1 medium size egg for 50 g cream / sour cream)
300 ml heavy cream (22-35%) or sour cream (~30%)
1/2 tsp ground nutmeg
ground pepper to taste
salt to taste (depends on how salty your filling is)

350 g bacon
150-200 g grated cheese (Emmental, gruyere, cheddar)
to your taste: you can add some onions, chopped and cooked until tender/translucent
2️⃣ QUICHE WITH CHICKEN AND MUSHROOMS 6:34
350 g chicken meat (breast or thigh)
150 g mushrooms
100-150 g cheese (Emmental, gruyere, cheddar, etc.)
100 g baked bell peppers or dried/confit tomatoes (see • How to make TOMATOES CONFIT how to make tomatoes confit)
salt to your taste
you can also add some fried chopped bacon - it'll only make it tastier

400 g salmon
150 g spinach (can be replaced with broccoli)
100-150 g cheese (mozzarella, feta, goat cheese)
salt and ground pepper to taste
10 g butter

500 g sweet pears
150-200 g blue cheese (roquefort, gorgonzola, etc.)
2 celery stalks (optional, can be replaced with broccoli)
