Xiaomi Redmi Note 8 Bluetooth bugs are the worst. But I have a few suggestions to help your pair devices (earbuds, headset, wireless speaker, etc) with MIUI and Android.

You're not going to be able to find an application icon in your app drawer for Bluetooth. However, the Redmi Note 8 Pro and its MIUI firmware use a basic Bluetooth app to handle the connections for accessories.
Most of the time this application does its job and it's virtually invisible since you only really interact with it via the Settings or the Quick Settings panel. However, there are many instances when this application acts up and it needs to be reset.
Thankfully, it's easy to do and it doesn't require you to lose any of your photos or games.
If you notice that you are no longer able to pair your Bluetooth earbuds with your Redmi Note 8T then the first thing you'll want to try is to simply reboot the smartphone. I know it sounds like a silly troubleshooting step. . .but I have feedback that shows it has been proven to help.
After that, we can try clearing out the "cache" as well as the 'data" for the Bluetooth application itself. you'll need to find the app from within the Settings area. But you'll likely need to toggle the view of system apps for it to show up.
You will need to go through the pairing process with your Bluetooth devices again.
But it should help you to finally get that connection going.
Failing that, Android does also have a way to reset Bluetooth, WiFi, and Mobile Data connections. It's an all-in-one sweep and you will need to connect to your saved WiFi networks again. But again, it has been shown to help fix these random Bluetooth bugs that Android has so often.
Failing all that, the last thing I can recommend is that you perform a factory data reset. That should put your phone back to square one and let you start off with a clean slate.
