for 200g rose petals:
1,600g white sugar
1,300ml water
3g citric acid

Wash the petals with cold water. Place in a colander.
Add sugar and water to a thick-bottomed pan. Bring to a boil. Boil over medium heat for 15 minutes.
Add citric acid and rose petals.
Stirring occasionally, cook over medium heat for 20-30 minutes until the syrup thickens. Drop onto a small plate, put it in the refrigerator for a couple of minutes and check for doneness.
At the end add a little more citric acid. Cook for a couple of minutes and it's done.
Let cool completely, cover and let it rest overnight.
