Ordinary belyashis are inferior to them in taste and cooking time! I ended up with 55 mini-belyashis from 400g of kefir: they fry three times faster, and the dough is simple to make, without adding yeast (as you like). Thanks to a small detail (a spoonful of semolina), the dough is easier to knead because semolina absorbs moisture, making the dough elastic, and helps to keep the pastries fresh after cooling. The finished meat pies will be as airy and tender as possible; you can forget about the rubbery results of kefir-based dough. Vegetable oil plays an equally important role in the dough; add it as I recommend, and you'll get beautiful belyashis or pies with tiny bubbles on top.

egg – 45g = 1 pc
semolina – 20g = 1 tbsp
baking soda – 8g = 1 tsp
flour – 550g = 4 cups* + 1.5 tbsp
vegetable oil – 50 ml = 3.5 tbsp

minced meat – 700g = 28 tbsp
onions – 300g = 3 medium onions
water – 50-70 ml = 3.5-4.5 tbsp
