Ingredients for preparing lightly salted pink salmon for salmon:

1. Pink salmon 1-1.5 kg
2. Salt - 5 tablespoons
3. Sugar - 2 tablespoons
4. Cognac - 1 tablespoon
5. Peppercorns - 5-6 pieces
6. Vegetable oil - 50-100 ml

How to cook lightly salted pink salmon for salmon:

1. Let the pink salmon defrost a little (not completely, because it will be more convenient to clean the fish and cut it).
2. We process the fish: we cut off the head, remove the fins, get rid of the fish entrails, and thoroughly wash the belly.
3. Cut the fish into pieces that are convenient for salting them.
4. Take 1 liter of clean water (if the water is boiled, it should not be warm or hot, but completely cooled), dissolve 5 tbsp in it. spoons of salt, 2 tablespoons of sugar. Add peppercorns.
5. Place fish pieces in salt brine for 1 hour.
6. We take out the fish, place it on special paper towels or table napkins, and let the brine drain completely.
7. Place the fish in a container, grease or pour with vegetable oil, preferably refined. If you place fish in several layers, pour oil over each layer. Close the container with a lid and place in the refrigerator for 30-40 minutes.
