Ingredients:
Serves 8-10
1/2 Cup of Olive Oil (more or less)
1 Cup Diced Ham
1 Cup Diced Chorizo Sausage
1 Large Onion Diced
1 Medium or Large Green Bell Pepper Chopped
1 Medium or Large Red Bell Pepper Chopped
4-6 Cloves Garlic Minced or Crushed
5 Cups of Chicken Broth
3/4 Cup Red Wine
1/2 Cup of Water
1 Can (3.75oz) Smoked Clams in Oil
1 Can (3.75oz) Smoked Oysters in Oil
1/2 TSP of Bijol Powder
6-8 Bone in, Skin on Chicken Thighs
4 Cups (2 14oz Bags) of Valencia Rice
2 Teaspoon salt
3-5 Medium Lobster Tails, meat removed from shell and cut into bite-size pieces
2 Pound of Medium Raw Shrimp, peeled and deveined (you can use less especially if you're going to add any additional seafood lusted below- I would cut down the shrimp to 1 pound or less )
1 Pound of Scallops (optional)
1/2 Pound of Fresh or Frozen Crab Meat leg sections cut in pieces (optional)
Fresh clams or mussels in the shell (optional)
1 Cup Frozen Sweet Peas
A few slices of Green or Red Bell Pepper
1 TBSP of Butter

Oven Time: 350 F for 10-15mins
