In this video, I've shown how you can enable the Double Opt-in feature in WooCommerce MailChimp Newsletter Discount Plugin.
The Double opt-in requires a confirmation step in which the user receives an email and has to confirm their subscription. Learn more about double opt-in: https://nnet.co/Om53y
There is a web-hook feature that we have added, if enabled, that will send you an email confirmation that the user has verified his email and added to the list of subscribers.
