best broccoli crunch salad 🥦🥓
I’ve been playing around with this recipe for a few years now and I always come back to the simplest version of it. It gets too complicated (and not as tasty in my opinion) when you start adding too much to it, and honestly the addition of a fresh crunchy cucumber is key. The warm bacon vinaigrette ties it all together and now you have the perfect thing to bring to a bbq or dinner party or just make for yourself for meal prep at home!
Ingredients:
1 head broccoli, chopped
½ cucumber, chopped (or 1 small cucumber)
½ red onion, finely minced
½ cup shaved Parmesan
½ cup crumbled bacon
3 tbsp apple cider vinegar
1 tbsp whole grain mustard
1 tbsp maple syrup
1-2 tbsp olive oil
Salt & pepper
Sesame seeds or chopped almonds
