to start with 500 g of sifted flour
3 yolks
1 tsp salt
1 tsp Sahara
200 ml. cold water
approximately 1 tbsp. with a heap of butter or 30 g
flour for homemade and table dusting
minced meat as usual
700 g pork and beef
1 onion
salt
pepper
dried garlic optional
a few ice cubes or water
I DO NOT pound the minced meat, I just mix it well - it remains tender and crumbly.
