Taking beets from 1/10 to 10/10!
If you’ve ever had a beet smoothie or unseasoned beets, you know that their flavor can be pretty…earthy 🌎 (lol).
But I figured out a way to TRANSFORM them and everyone who’s tries them likes this LOVES them! ❤️
This trick is ROASTING and the GLAZE…
-Slow roasting beets releases their natural sugars
-Adding a sweet maple balsamic glaze enhances the natural sweetness and masks some of the earthy taste
Maple Glazed Beets and Carrots
3 medium beets, washed, peeled, and chopped
3 large carrots, washed, peeled, and chopped
3 tbsp maple syrup
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp dijon mustard
Salt and pepper to taste
Fresh thyme for topping
Preheat oven to 400F.
In a small bowl whisk together glaze ingredients: maple syrup, olive oil, balsamic vinegar, dijon mustard.
In a large bowl combine chopped beets and carrots. Pour dressing over them and toss to coat. Add salt and pepper to taste.
Spread out evenly on a baking sheet and bake for 30-40 minutes (flipping halfway) until fork tender and caramelized. Roasting time varies based on size of beets and oven.
Top your beets with some fresh thyme leaves if desired- enjoy!
