Star Wars Battlefront 2015 has offline bot support. There's very little customization options, but the pc version has plenty of mods.

Notes
Bots were added post launch, so version 1.0 will not work. You have to update. The bots mode is called "Skirmish." You can play walker assault and fighter squadron on 8 different maps.
The maps: outpost beta, twilight on hoth, jundland wastes, forest moon of endor, survivors of endor, graveyard of giants, sorosuub centroplex, and jawa refuge.
3 difficulties: normal, hard, and master.
The bot mode can be played solo offline, and online co-op with a friend.
Console versions have a splitscreen local co-op option that I couldn't find on the PC version.
