How to use variables in Power Automate Desktop (PAD)

Here's a quick demo of variable use and passing data from Outlook to Excel inside a PAD flow. It's not polished, but with some experimentation, you can quickly configure it to your needs.

I don't show the idea of Parent/Child flows and input/output variables here. They work the same way as the variables I showed here, but you can do quite clever actions - like passing data to and retrieving from Cloud flows and other apps. It's a really powerful set of actions when you dig deeper.
