In this video I will be making Cinnamon Roll Cereal.
Ingredients:
(For the Dough)
-312g/2 1/4 C Flour
-50g/1/4 C sugar
-5g/1/2 TBSP Yeast
-7g/1/2 Tbsp Salt
-2 whole eggs
-110g/1/4 C whole milk
-127g/9 tbsp butter
-put all ingredients except the butter into the mixer and mix till combined
-add butter in seperate increments until fully combined.
-beat for about four minutes.
-put dough into a greased bowl and cover to let proof at room temp fo two hours.
-put onto a greased sheet tray with parchment and flatten out with oiled hands.
-cover with plastic wrap and toss in fridge overnight
-dust a cold surface with flour and set dough atop then dust dough with flour.
-roll out into 1/4 cm thick sheet and trim the unwanted edges to make a perfect rectangle
-spread filling evenly on dough edge to edge
-roll into logs of desired size and cut into desired thickness
-proof for thirty minutes on a sheet tray with greased parchment or silpat.
-brush with egg wash and bake at 375°F for 15-20 minutes until golden brown.
Finish with icing and enjoy.
(For the Filling)
-85g/6 Tbsp melted butter
-56g/1/4 C brown sugar
-25g/1/8 C white sugar
-1 Tbsp cinnamon
-mix all ingredients till smooth and hold at room temp till it firms up.
Do this atleast an hour prior to making.
(For the icing)
-3 Cups Powdered Sugar
-1/2 Cup Heavy Cream
-1tsp vanilla extract
-whip all ingredients till smooth.
