Our Cornish cross meat chickens have been growing on pasture in a chicken tractor for a couple of months now. We move the chicken tractor every day and give them access to a new patch of pasture! Now it is time to process them and get them into the freezer to feed our family with. The processing is a bit of work. First they have to be dispatched, then scalded and plucked. Next they must be eviscerated and cleaned up, then put on ice. After they get cold we will break some of them down into chicken breasts, wings and thighs. The carcasses left over will be used to make chicken stock. The rest we will shrink wrap and freeze whole.
